Connor's culinary journey began unexpectedly, with a post-school venture into the world of cooking. After honing his skills in Dunedin's finest establishments, he ventured back to Wanaka. Joining forces with James Stapley at Bistro Gentil where their shared dedication earned them a prestigious hat.

Fueled by a desire to explore, Connor's culinary journey took him to Germany, where he served as Sous Chef at the Michelin-starred 'Restaurant Philipp.' Three years amidst Europe's culinary treasures sharpened his expertise and palate. Eager to contribute to New Zealand's flourishing food scene, Connor returned to Wanaka, embracing the role of Sous Chef at Arc. Here, in a small, quality-focused kitchen, he found a like-minded community of chefs and a clientele passionate about exceptional cuisine. 

At Minaret Station, the proximity between the guests and their dining experience is a unique hallmark. Connor relishes the intimate relationship forged in creating not just meals, but moments that mirror the beauty of the surrounding landscapes. His culinary philosophy is rooted in the essence of seasonal, local produce – be it the freshness of West Coast crayfish or the richness of venison from Alpine Wild Venison. 

“I always try to use the product to the best of its ability. This means to not overcomplicate dishes and cook using products that complement each other the best they can. Cooking using the seasons always allows you to create an experience for the guests that best represents New Zealand.” 

What sets Minaret Station's culinary journey apart in Connor’s eyes is the trust guests place in the chef to curate a menu tailored to their tastes. This trust is both a challenge and an opportunity for creativity, allowing Connor to experiment and craft dishes that resonate with each individual palate.

Beyond the Alpine Lodge's kitchen, Connor finds joy in mountain biking, football, and the simple pleasures of spending quality time with friends and family. Wanaka, with its endless offerings, serves as both his playground and muse, inspiring a chef whose passion for culinary artistry knows no bounds.
