Recipe: Smashed Peas and Avocado on Toast with Poached Eggs

This fresh, simple recipe from our chef, Connor McLean, celebrates the season’s best ingredients, combining creamy avocado, vibrant peas, and perfectly poached eggs for a dish that’s both light and satisfying.

In this instance, the eggs were delivered fresh from our very own farm at Minaret Station that same morning, offering the true farm to plate experience for our guests.

Whether enjoyed as a wholesome breakfast or a quick lunch, this dish captures the essence of springtime in every bite. It’s easy to recreate at home, bringing a taste of Minaret Station into your kitchen.

    • 4 farm-fresh eggs

    • 2 ripe avocados

    • 1 cup frozen or fresh peas

    • 1 clove garlic

    • Zest of 1 lemon

    • Juice of 1 lemon

    • 1 tbsp olive oil

    • 4 slices of seeded bread

    • Fresh herbs for garnish (mint, rocket, basil, parsley)

    • Optional: grilled bacon or crumbled feta

    • Salt, to taste

    • ½ cup white vinegar (for poaching)

Smashed Peas and Avocado on Toast

Step 1: Prepare the Poaching Water
Set a large pot of water on the stove, add ½ cup of white vinegar, and bring to a gentle simmer.

Step 3: Avocado Mousse
In the blender, combine the ripe avocados, a pinch of salt, lemon juice, and olive oil. Blend until smooth and creamy.

Step 4: Toast
Lightly toast your seeded bread and butter each slice.

Step 5: Poach the Eggs
Crack the eggs into a small jug. Swirl the simmering water and gently pour in the eggs. Let them poach for 3 minutes until the whites are set, but the yolks remain runny.

Step 6: Assemble
Start with your buttered toast. Spread a generous layer of avocado mousse, followed by the smashed peas. Top with your perfectly poached farm-fresh eggs, and garnish with fresh herbs. For an extra touch, add grilled bacon or crumbled feta
